Bacon & Cheese Cookie Recipe
That we made for our clients at Xmas
2 1/2 Cups Wholemeal Flour, 1/2
cup (cornmeal) Polenta, 1 cup Grated Cheese, 1 cup diced
rindless bacon, 2tbsp chicken stock powder, 2tbsp minced
garlic, 1 egg, water.
1. Combine dry ingredients plus
garlic, mix well. 2. Beat egg, Add to dry mix with
sufficient water (usually from 3/4-1cup) to make a dough
which isn't sticky. 3. Roll dough so that it's approx
1/2-3/4cm thick.4. Cut into desired shapes. 5. Depending
on oven, cook at 180 degrees for 20-30mins, or until
cookies are no longer soft to touch. 6. Allow to cool.
when cool, cookies should be hard. Store in airtight
container for 2-3 weeks.
